Lactic anaerobic processing is a relatively new method of production. Ripe coffee cherries are sent to the mill and allowed to ferment in zero oxygen. The result is an extroardinary cup one with lovely fruity notes, molases, and dark rum. These beans hail from San Andreas farm in the Satandar region of Colombia.
